I’m Back!!!

Hey everyone im back. Sorry that I havnt blogged for so long, but I have had a lot going on at the moment and I just havnt had the chance. But now everything seems Ok so im bad to blogging. Yay!

These past couple of months I have had a lot of stressful things happening in my life. I wont go into details but it has been a horrible time for me. These led me to binge eat. A LOT. I know that binge eating is a horrible problem but I just couldn’t help it. I ate things that i normally wouldn’t and ate wayyyy to much. I put on soooo much weight. 8 kg in fact. While im not over weight, i don’t really like the fact that i have put on so much weight, so I have decided that I am going to try and lose it. Now im still going to eat the same healthy, balanced meals that i used to eat, just maybe in smaller proportions. Im going to try and aim for 5500 – 6500Kj (1313 – 1552cals). I am also going to try exercising a bit more. Wish Me luck :)

Anyway on to today. This morning for some reason i just randomly woke up at 4am and was wide awake! After laying in bed for about an hour i decided to get up and workout in my home gym. I ran on the tredmill for 5 mins to warm up, then i did about 30 mins of the bike doing intivals. I also did some ab, leg and but work. It was a GREAT workout.

By that point i was STARVING and decided to make brekky. I had 1 egg and 1 egg white with a toasted 9 grain english muffin. I also had some sliced strawberries.

Oh yeh and i forgot to mention, before my workout i had a tiny slice of an olive oil cake thing that my mum made yesterday.

Oh guys im so sorry. These past few days i have had so many problems with my internet i havnt been able to post or anything. Today it is finally working but it took about 10 hours just to get this page up so im not even going to try with the photos. Even when i type it is very lagged. It should be fixed very soon, by the weekend at the latest. See you then :)

So Forgettfull

Oh im so sorry, i completely forgot to take a photo and post about last nights dinner. Last night I was at my grandparents house, so we just had pizza. My uncle and I went out to buy it but every single shop that we went to had closed down. It was so strange. We eneding up finding one after driving around for like 2 hours. Then by the time we got home, taking a photo totally sliped my mind. Im so forgettfull sometimes.  I ended up just having 2 slices, a piece of garlic bread and for dessert i had strawberries.

 This morning for breakfast I was browsing my grandmothers pantry to see what i could have for breakfast. I ending up finding Uncle Tobies Quick Oats Brown Sugar and cinnamon Flavour. It looked pretty good, so i decided to give it a go. I also added in some sliced strawberries after it had cooked.

                     

It was actually really nice. Slightly sweet from the brown sugar, but not overly sweet. I couldnt really taste the cinnamon though, but i still liked it.

 Well today Im spending the day with my grandmother, and we are going shopping, so that should be good. I like going out with my grandmother because i dont get to do it very often, and when i do do it it ends up being a really fun day. Anyway, have a good day! :)

Cool, Crisp, Refreshing

Whenever the weather starts heating up i always feel like fresh salads. They are so refreshing and crisp. So today for lunch i made one using lettuce, baby spianch, rocket, tuna in brine, chickpeas, carrot, cucumber and capsicum. I had it with my usual Balsamic, olive oil and garlic vinigarette.

I also had some cold, refreshing watermelon as well…

Now i feel refreshed and satisfied :)

Summer Fruits

Todays going to be another hot one. Yay! This weather is much like summer weather than spring weather. Oh well im not complaining. Summer is definatley my favorite time of the whole entire year. I love everything about it, but one of my most favourite things has got to be the fruits. I LOVE summer fruit. I cant wait untill its all in season.
Anyway, well today we had lots of fresh fruit in the fridge, so i decided to make a fruit smoothie. I used Light Milk, Yogurt, Pineapple, Strawberries, Blueberries and Banana. It was really yummy. I have never used pineapple in a smoothie before, but i think i will more often now because it was pretty good.

I also had a small bowl of dry Kelloggs Mini Wheats. Well this morning i think i might go for a swim in my pool, and then im off to spend the weekend at my grandparents house.

Chicken on Fire

wow it was hot in Sydney today! We actually turned the air con on tonight to cool the house down a bit.
Usually when the weather is hot, we like to fire up the barbie and have BBQ for dinner, so tonight thats what we did. We put pre marinated portugese chicken on the barbeque and left it to cook, next thing we knew it was on fire! So yes our dinner was slightly burnt tonight. We gave meaning to the words “charcol Chicken”. Oh well it still tasted good.

Thats my bit with most of the burnt part taken off. We also has asparagus(yum) and salad.
OK well im off to pack because tomorrow im going to my grandparents house and im staying there all weekend. Its kind of like a tradition, every holidays my sister and I go and stay a few days with my grandparents, and we usually go shopping or to the movies, stuff like that. I’m actually looking forward to it because I very rarely get it see my grandparents.

Shopping and Sushi

Shopping and Lunch today was really fun. The Sushi Bay was great! I love the variety, there were so many to different flavours to choose from. Me and my friend shared everthing that we got, so i ate half of what is pictured here:

Tuna and Salmon i thinkI love sushi, and everything here tasted sooo good. I definitely will be coming back here again. After Sushi my friend and I just went shopping. It was such a fun day!

When I got home I felt like something cold a freshing so i made myself a parfait using Yoghurt (Mango and Peach Nestle Diet), Strawberries and Blueberries, and some muesli. Yum.

Its Gonna be a Hot One

This morning I got up bright and early at 6 o cloak and went and rode my exercise bike for 40 minutes. I was watching the Today Show and the weather report said its going to be 35 degrees!!!! Wow thats hot for a spring day. It means summer is soon aproaching. Yay!

We have lots of yummy fresh strawberries and blueberries to use up, so for breakfast i decided on berry porridge. I made it with Uncle Toby’s Quick Sachet, 2/3 cup milk, vanilla essence, cinnamon and LOTS of Strawberries and Blueberries.


The Strawberries at the shops are so cheap and the moment, and they are also really yummy.

Today im spending the day with my best friend. We are going shopping and then to The Sushi Bay, which is a sushi train thing. I love sushi but i have never been to a sushi train before, so im pretty excited :)

Lean as Chicken

Im so sorry i completely forgot to take a photo of lunch. I was in such as hurry to get to work. I only remembered about taking a photo just as i was taking the last bite of my delicious tuna sandwich, but obviously at that point it was too late :( Well anyway for lunch I had a tuna and salad sandwich made with Greenseas Canned tuna in Brine, Baby Spinach, Grated Carrot, Cucumber on wholemeal country grain bread. It was good. I also had an apple.

For dinner i came home to one of my mums specialty dishes. Mum made pork cooked in the oven thing, with roasted carrots and sweet potato ( I love sweet potato!). My mum uses pork tender loin and it is sooo good. I love pork and lately iv been seeing in a lot of magazines ads stating that trimmed pork is as lean as skinless chicken breasts, so i guess thats a plus. I love that its so juicy, tender and versatile.

By the way thats onion on top of the pork. I also had my usual salad.

Baking Mood

Later on this morning, before work i was in a bit of a baking mood. I LOVE baking but i very rarely get a chance to actually do it. So I decided to make on of my fav recipes, mini double chocolate muffins. These muffins are so good. I dont remeber where i got the recipe from but i have altered them a little the make them lower in fat. Heres the recipe:

Mini Double Chocolate Muffins

Ingredients

  • Cooking spray for greasing
  • 150g (1 cup) plain flour
  • 25g (1/4 cup) cocoa powder
  • 2 tsp baking powder
  • 100g (1/2 cup) brown sugar
  • 75g dark chocolate, roughly chopped
  • 60g (3 tbs) margarine (I used flora light), melted, cooled
  • 1 egg, lightly whisked
  • 80mls (1/3 cup) light milk
  • 1 tbs favorite jam(i used St Dalfours Wild blueberry)

Method

  1. Preheat oven to 180°C ( 356°F). Grease 24 mini muffin pans
  2. Sift together the flour, cocoa powder and baking powder into a medium mixing bowl. Stir in the brown sugar and chocolate.
  3. Whisk together the butter or margarine, egg, milk and jam until combined. Add to the dry ingredients and stir until just combined (be sure not to over mix).
  4. Spoon mixture evenly into the muffin pans and bake in preheated oven for 12 minutes or until cooked when tested with a skewer. Stand in pans for 2-3 minutes before turning onto a wire rack
Just out of the oven…
Worked each one out to be about 307 Kilojoules (73 calories), 2.5 grams of fat 1.2 saturated fat and 1.6g protein. These muffins are a perfect sized little treat. I wrap each one individually and put them in the freezer for whenever im in the mood for a treat. Yum!
I of course had to have one for a morning snack…
